Is it possible to have a hidden forum that, for example, the moderators can use to discuss the board ?

Certainly.
There is a user grouping system in GFourm that allows you to assign posting functions to different user groups, if you wish. You can use this, as I do, to make private forums for different groups of users. Other users can't see them (unless you want) and they cannot search into them.
