does anyone knows how & where it is possible to translate the texts of the signup-form (First, Name, Last Name, Company Name, Birthday, etc..)

Go to 'Database -> Customize Profile', then click on the field you want to change and edit the 'Form Display' field.

If you are using multiple templates, I guess you have to add all those 'profile' fields to your signup template, and you problably shouldn't use the automatic form generation.
